Here you see Jiro and his staff pursue perfection in not only the most complicated techniques but in the most basic, seemingly simplest things (the way you wring hot hand towels for the guests, the way you cook the rice...). You see Jiro's passion for his craft. (He's 85 when this movie is shot and he still works tirelessly simply because he loves making sushi so much.) You see the awesome perseverance of his staff. (You have to work 10 years before you're allowed to make the egg sushi! Even then, you make and trash hundreds before you produce something up to Jiro's standards.)
I've been lukewarm toward sushi in the past, but this movie has made me see the light.
Anything, when it's done to the highest standard, can be an inspiration, a marvel. It can be art.
This was a good one. But now I'm craving sushi at 8:19AM.
